Sweet Potato Brownies



Can't tell you how much I enjoyed devouring these brownies all without the guilt because they're filled with healthy good for you stuff.

Just be careful I almost ate the whole pan in one day, lol I was having a major sweet tooth but any ways this is a super simple recipe to make sweet potato brownies that are moist and just plain delicious. Oh, yea and they're only 61 calories per 28 g!

Ingredients

  • Cooked 14 -17 oz sweet potato (no skin)
  • 1/2 cup whole wheat flour flour (or quinoa flour, oat flour, oatmeal ground into flour)
  • 1/2 cup zucchini (to add moisture)
  • 1/2 cup cocoa powder
  • 1.5 tsp baking powder
  • 1 eggs
  • 3 egg whites
  • 1/4 cup raw organic honey
  • 1/4 sugar
Directions

1. Set oven to 350
2. Bake or microwave sweet potato until soft. Allow it to cool before proceeding.
3. Peel and grade zucchini then set to the side.
4. Mix all wet ingredients in one bowl and all dry ingredients in the other. Then combine all and use a mixer or spoon until evenly combined.
5. Use cooking oil to coat a 8x8 pan and pour in mixture. Bake on 350 for about 15-20 minutes, insert tooth pick or fork into brownies when it comes out clean they're ready!

Approximately: 61 calories per 1 oz or 28 g
