Super Easy Whole Wheat Pancake



Who doesn't love pancakes in the morning??!! Especially if they're whole wheat pancakes and less than 70 calories per servings!

This recipe is so perfect because it's short, simple, and to the point without all those funny ingredients, lol!

Give it a try, oh, and I used sugar free 35 calorie syrup, whoop whoop absolutely guilt free all the way around :)

Ingredients

1 1/4 cup whole wheat flour
2 1/4 baking powder
1 egg
1/4 tsp salt
1 1/4 cup unsweetened almond milk or skim milk
nonstick cooking spray

Directions

Mix dry ingredients in one bowl and wet ingredients in another then combine.
Spray skillet with cooking spray, pour in batter and cook.

Makes about 5-7 cakes

Approximately: 68 calories per serving

Healthy Baked Salmon Patties Recipe



Fish anyone??? My love for salmon patties or as my grandmother would call them salmon croquettes, go way back. My mom would cook them all the time in a pan filled with oil plenty of onion, eggs, and crackers- served with butterd white rice and creamed corn... baby life was sweet back then!

Today however I still want to enjoy that home cooking mama use to make but in a healthier way because that just feels right, to me. So I want to share my healthy spin on what I think is an old time classic, giving you a healthy option with baked salmon patties that are moist and most importantly flavorful...

Ingredients

2-3 cans of salmon cleaned and drained
Onion diced
Red and yellow bell peppers diced
3 eggs or 6 egg whites
1 pk. Whole wheat crackers
Cooking spray or olive oil 
Salt
Lemon pepper seasoning (optional)
Lemon (optional)

Directions

1. In a skillet saute your vegetables.
 2. Next in a large bowl combine the salmon that has been cleaned, with the peppers and onion. Season to taste using lemon pepper seasoning and salt, with about 3-4 teaspoons of lemon juice. Then add eggs. Mix well.
3. Using the cooking spry or olive nicely coat a cookie sheet.
4. On a plate or bag crumble the crackers. Then take a handful of salmon mixture (you can make them as big or as small as you want that's up to you) and create your patty. Next coat the patty with the cracker crumbs and place them on the cookie sheet.
5. Bake 15-20 minutes in the oven on 350. Adjust cooking time to fit your oven. TIP: Be sure not to over cook, this will make the patties very dry and we don't that ;)

So that's it! This is a great dinner choice and if there's leftovers which there wasn't in my house, lol, you can take it for lunch the next day. The whole point here is to find foods you like, that taste good and that you can feel good about eating. Let me know how you liked it!

Whole Wheat Biscuits


Had a serious random craving for some biscuits but I wanted to #1 keep it healthy and #2 I wanted them to taste good! So I whipped these babies up in about 10 minutes had them with a serving of jelly and honey :)

Ingredients
  • 2 cups whole wheat flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 4 tbs butter ( cold)
  • 1 cup unsweetened almond milk or any milk of your choosing

Directions
  • In a medium sized bowl combine flour, baking powder, and salt. Mix well with whisk or fork.
  • Cut the ½ stick butter into little pieces and then mix the pieces into the flour mixture using hand mixer until it resembles coarse crumbs.
  • Then pour in the milk and mix it all together. Knead the dough with your hands add a little flour if dough is too sticky. Cover dough in a bowl and let sit for 3-5 minutes then turn out onto a counter.
  • Pat it out flat with your hands until the dough is a somewhat even ¾-inch thickness (sprinkle with a little flour if necessary).
  • Turn a drinking glass upside down and cut out biscuit rounds
  • Then put them on an ungreased cookie sheet and bake at 375 degrees for 10 – 12 minutes or until lightly browned.

 Approximately: 83 calories per biscuit

Sweet Potato Brownies



Can't tell you how much I enjoyed devouring these brownies all without the guilt because they're filled with healthy good for you stuff.

Just be careful I almost ate the whole pan in one day, lol I was having a major sweet tooth but any ways this is a super simple recipe to make sweet potato brownies that are moist and just plain delicious. Oh, yea and they're only 61 calories per 28 g!

Have fun....

Ingredients

  • Cooked 14 -17 oz sweet potato (no skin)
  • 1/2 cup whole wheat flour flour (or quinoa flour, oat flour, oatmeal ground into flour)
  • 1/2 cup zucchini (to add moisture)
  • 1/2 cup cocoa powder
  • 1.5 tsp baking powder
  • 1 eggs
  • 3 egg whites
  • 1/4 cup raw organic honey
  • 1/4 sugar
Directions

1. Set oven to 350
2. Bake or microwave sweet potato until soft. Allow it to cool before proceeding.
3. Peel and grade zucchini then set to the side.
4. Mix all wet ingredients in one bowl and all dry ingredients in the other. Then combine all and use a mixer or spoon until evenly combined.
5. Use cooking oil to coat a 8x8 pan and pour in mixture. Bake on 350 for about 15-20 minutes, insert tooth pick or fork into brownies when it comes out clean they're ready!

Approximately: 61 calories per 1 oz or 28 g
